Ratio: Use 1 oz. of vanilla beans per 8 oz (1 cup) of vodka for a traditional flavor. For a stronger extract, I prefer to use a double-fold of 2 oz. of vanilla beans per cup.

How to Make It

  1. Split or cut the beans. Using a sharp knife, slice each vanilla bean lengthwise, leaving about half an inch uncut at one end. This exposes the seeds and lets the flavor release into the alcohol.
  2. Time Saver: I prefer to simply cut the bean in half or thirds which achieves the same thing and cuts down on my prep time. I'm all about simplicity.
  3. Add beans to the jar. Place the split beans in your glass jar, cutting them in half crosswise if needed so they're fully submerged. (the key is to keep them fully submerged)
  4. Cover with vodka. Pour vodka over the beans until they're completely covered, leaving a small amount of headspace.
  5. Seal and label with a start date. Secure the lid tightly and write today's date on a piece of tape on the jar — you'll want to track it.
  6. Store and shake. Keep the jar in a cool, dark place (a pantry is perfect) and give it a gentle shake once a week.
